Hello October!

In honor of the new month, Max and I decided to mix up some Chocolate Chunk Pumpkin Bread.
  • 3 cups white sugar
  • 1 (15 ounce) can pumpkin puree
  • 1 cup vegetable oil
  • 2/3 cup water
  • 4 eggs
  • 3 1/2 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1 tablespoon ground nutmeg
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 cup miniature semisweet chocolate chips (I used dark chocolate chunks)
  • bake at 350* for 60 minutes

I told Max he could have one chocolate chunk. He then said right back at me, or four momma! So I let him.

I didn't realize how much pumpkin bread this would make.

....it made a LOT!

I will not tell you how much of it I have eaten. Pumpkin is good for you anyways, so even if I did almost eat a whole loaf, no damage is being done  :)
Okay, now go make this. I'm telling you, it is totally delicious!
